Almost Homemade Cheesy Chicken Rice Veggie Casserole

I have been trying to make healthier meals for my family and really look at the ingredients that go into our boxed food. It can make you go crazy sometimes but when I can make something from scratch and I realize how easy it is, I get excited! Well tonight I did just that. I had time before my dear son and hubby arrived home and I had leftover chicken that I had baked during the past week and I thought it would be good and easy to make a casserole. Hubby likes casseroles too, so it was a win-win. I looked up chicken, rice, veggie casseroles. I soon realized that instead of chicken broth (which I had stocked up on) I needed Cream of Chicken soup. But I don’t want to use Cream of Chicken Soup, I thought to myself, nor do I have any. So I remembered that during a Pinterest pinning extravaganza I learned you could make your own. So then I sought out to make an easy homemade cream of chicken using a recipe that called for my chicken broth. Yes that part was not homemade but humor me ok?

The recipe I used for the chicken rice veggie casserole was… www.food.com/recipe/easiest-chicken-rice-veggie-casserole-257904.

The recipe I used for the Homemade Cream of Chicken soup was… www.pinchofyum.com/homemade-cream-of-chicken-soup.

Now I altered the casserole recipe a bit and used cream of chicken instead of mushroom like it called for. We are not big mushroom people and before you say, ‘well you really can’t taste it or anything’ it’s the thought of the fact that it’s in there with little chunks of mushrooms that skeeves me out ok! Also I added shredded cheese on top like I saw listed on some other variations of the casserole. Everything else I added.

I neglected to get a picture of the cream of chicken before I poured it into the casserole dish but I did get a picture of the whole thing put together before I popped it into the oven.

So now I feel satisfied that my son (hopefully he will eat it!) and hubby’s bellies will be full and have somewhat of a healthy meal. So what are your favorite go to meals? Any easy healthy meals you care to share? Comment below and let’s help each other out!
