Easy 3 Ingredient Scottish Shortbread Cookies

Yesterday, I was resting, all cozy in my bed and couldn’t fall asleep for a nap. I started looking at Pinterest- organizing and curating my pins. I do this from time to time, weeding out ones I don’t need or are not relevant anymore.

I wandered into my ‘Christmas’ board and saw ‘3 ingredient Scottish Shortbread Cookies‘. I forgot I had pinned this recipe. The blogger said it was good with hot cocoa. It was a cold, rainy Sunday, so I thought, why the heck not!

I got up, went out to our kitchen and started on our chili dinner. I pulled the Kitchenaid out and gather my ingredients- powdered sugar, flour and butter. I let the butter sit out a bit to soften. I mixed the three ingredients together.

Then I put some wax paper down and  rolled the dough out using my Great Nanny Campbell’s rolling pin. How fitting, right?

They all fit on two of my cookie sheets. You use parchment paper as well. Hardly any clean up! I did use a pizza cutter to make them into sort of a rectangular shape. You could use a round biscuit cutter or any cookie cutter. I wanted to use a Fall design but the one I had was one one of those old plastic ones and it didn’t work so well. In my opinion, the metal ones work best. You could definitely decorate them with icing if you like, at Christmas time or anytime of the year. I think it would be cool to get a unicorn cookie cutter and make it totally Scottish! Ha!

Without further ado, here’s the recipe…

Ingredients

2 sticks (1 cup) of butter, softened

1/2 cup of powdered sugar/10x/confectioner’s sugar

2 cups of all-purpose flour, not sifted

 

Directions:

  • preheat oven to 325°. Line two baking sheets with parchment paper

  • Mix all ingredients in a large bowl until completely combined and dough forms.

  • Roll out dough on a floured surface. to about 1/4 inch thickness or slightly thicker. * I used wax paper and flour.

  • Using cookie cutters or a pizza cutter, cut out shapes. Place on baking sheets and pierce with a fork. *I used my small Pampered Chef spatula to pick them up and place them on the sheets.

  • Bake for 20 minutes or until just lightly browned. * it depends on your oven how long this will take, mine took about 25 minutes.

  • Cool on a wire rack or just cool on the baking sheets.

This recipe makes 20 cookies.

They turned out great! I had some hot cocoa and continued watching ‘Vikings’, our current binge watch.
