Grilled Beef and Tomato Skewers Recipe

Do you like to find new recipes? Do you still rip them out of magazines and other media and think you will try them sometime and never do? I was like that as well and I started putting them on my kitchen counter so I would actually try them this summer. I found this one in my grocery store chain’s magazine.

I tried this recipe this weekend, my husband and I liked it! I shared this on my Instagram and wanted to share the recipe here on my blog!

Ingredients

  • 1 ½ lbs boneless top sirloin beef
  • ½ (16 oz) French bread loaf- I sprayed these with grapeseed oil- you could do olive oil or coconut oil as well!
  • 1 pint cherry tomatoes
  • Grilling cooking spray
  • ½ cup prepared pesto
  • Bamboo or metal skewers- make sure to soak these in water for awhile before grilling so they do not burn!

Directions:

  1. Set grill to medium-high. Cut the beef into 1-inch cubes (I bought mine precut to save time), trimming any excess fat, and season with salt and pepper. Cut the bread into 1-inch cubes.
  2. Place beef, bread cubes, and tomatoes onto skewers, alternating. I sprayed mine with Grapeseed oil but you can use olive oil or coconut oil as well! 
  3. Grill 8–10 min., turning skewers frequently, until beef is cooked and bread is golden brown.
  4. Drizzle with pesto sauce and serve. 

I sprinkled the assembled kabobs with pepper and Himalayan sea salt- I love using this because it’s so much better for you and has great flavor! I think it would be delicious with fresh mozzarella or other cheeses and a nice salad or corn on the cob!

This seemed be enough for my husband, if you have any big appetites in your family!
