Are you looking for a healthy snack for your family? Well, I have you covered! This is my go to snack that is a hit with my family! It is totally gluten free! My husband and boys love them! You can definitely change the ingredients to what you prefer. However, so everything ‘sticks’ together, I would recommend keeping the honey (or you could use agave nectar). The peanut butter definitely helps, but I understand that there are some out there with a nut allergy!
I have used many different recipes off of Pinterest, but for some reason never saved them. I finally did this time and used this recipe.
You will need:
- 1 cup dry oatmeal
- 2/3 cup coconut flakes
- 1/2 cup peanut butter
- 1/2 ground flaxseed (I bought flaxseed and ground it myself with the blender attachment I used on the chocolate chips)
- 1/2 cup chocolate chips
- 1/3 cup honey
- 1 TBSP chia seeds
- 1 tsp vanilla extract
tip: I would double the measurements if you have kids that would devour these! They won’t last long!
1. Place ingredients in a medium bowl. Stir all ingredients until well mixed
2. Form into 1 inch balls
3. Refrigerator or freeze for about 20 minutes!
I melt the peanut butter for like 10 sec in the microwave just so its a bit easier to mix thoroughly. I put the chocolate chips in my smoothie blender that has an attachment for nuts, cheeses, etc. This helps them go further and not be so chunky. This time I added unsweetened cacao powder to add a bit more chocolate. See, totally, customizable (is that the right word?) to your preference! The recipe calls for coconut flakes- I do not like these and did not have them so, I omitted that.
After forming them into about 1 inch balls, I put them in a wax paper lined storage container. I freeze them for about an hour.
