3 Ingredient Pumpkin Chocolate Chip Muffins

 

 

Pumpkin Spice and Everything Nice….

Every time September rolls around, I get the craving for pumpkin anything. I am pregnant and that craving has obviously been amped up a notch or two, or three! I follow the blog and Youtube channel Pretty Neat Living. Jen recently posted a recipe for 3 ingredient Pumpkin-Chocolate Chip Muffins! She used the recipe via Mix and Match Mama.  Right now, I do not want to be in the kitchen measuring ingredients and baking for an hour or so and this was right up my alley! I thought about just putting them in a loaf pan and baking it, however, muffins/cupcakes seemed more appealing to me and would last longer and I thought I could freeze some of them for later. In the muffin tins they went!

Here is the recipe….

Ingredients

1 box of Spice Cake Mix

1 (15 oz) can of pumpkin

1 cup of chocolate chips

Directions

  1. Preheat oven to 350°
  2. Line muffin tin with cupcake liners
  3. In a bowl, combine cake mix with the pumpkin and mix it with a spoon. It will be thick. Once the batter is incorporated, stir in chocolate chips.
  4. Fill muffin liners 2/3 full and bake for 15 minutes.
  5. Once out of the oven, let cool for 5 minutes before removing.

You could use some cream cheese frosting to them, if you like. You can freeze them, just pop them in the microwave for 30 seconds and they will be thawed and ready to eat!

This recipe makes it easier to indulge my pumpkin (and let’s face it chocolate too) craving this season! I wanted to share for all those moms that like things easy this time of the year!
